Crab and Corn Fritters
|¼ cup butter||½ cup onion, minced|
|2 cloves garlic, minced||1½ cup fresh corn kernels|
|Pinch powdered ginger||¼ tablespoon habaneros or jalapenos, minced|
|2 cups flour||1 tablespoon baking powder|
|½ tsp. salt||¼ cup sugar|
|2 eggs, beaten||1 cup milk|
|12 ounces Blue Star Foods claw crabmeat; drained well, patted dry|
Heat the butter in a small saucepan. Add the onions and garlic; cook until soft. Add the corn and cook for about 3-4 minutes. Season with salt, pepper and ginger.Remove from heat, add the chilies.
Pour the cooked vegetables into the eggs and milk, stirring constantly. Sift flour, baking powder, salt and sugar. Fold all dry ingredients and crabmeat into the batter. Drop by tablespoons into hot vegetable oil and deep fry about 5 minutes or until golden brown.
