Crab and Corn Fritters


¼ cup butter½ cup onion, minced
2 cloves garlic, minced1½ cup fresh corn kernels
Pinch powdered ginger¼ tablespoon habaneros or jalapenos, minced
2 cups flour1 tablespoon baking powder
½ tsp. salt¼ cup sugar
2 eggs, beaten1 cup milk
12 ounces Blue Star Foods claw crabmeat; drained well, patted dry


Heat the butter in a small saucepan. Add the onions and garlic; cook until soft. Add the corn and cook for about 3-4 minutes. Season with salt, pepper and ginger.Remove from heat, add the chilies.

Pour the cooked vegetables into the eggs and milk, stirring constantly. Sift flour, baking powder, salt and sugar. Fold all dry ingredients and crabmeat into the batter. Drop by tablespoons into hot vegetable oil and deep fry about 5 minutes or until golden brown.
