Crab and Spinach Nachos
|2 tbsp. plus ½ cup olive oil||3 garlic cloves, minced|
|½ red onion, diced||½ lb. spinach, chopped|
|1 tbsp minced tarragon sea salt||16 nacho chips|
|8 ounce Blue Star Claw Crab Meat||1 cup grated gruyere cheese|
Preheat oven to 375F In a skillet heat the 2 tablespoons olive oil over medium heat. Add garlic and onion and saute for 3 – 4 minutes or until onion is translucent. Add spinach and tarragon, saute for 2 – 4 minutes or until spinach is wilted. Remove from heat and season with sea salt, to taste.
Divide the spinach among the nacho chips. Put the Blue Star Crab Meat on top, dividing it evenly and then sprinkle each chip with an equal amount of the cheese. Transfer to a baking sheet and bake 5 – 7 minutes or until cheese is completely melted.
Transfer to serving plate and garnish each nacho with heaping teaspoon of salsa. Serve immediately.
